Quick n Easy Meals
I really like to cook...once or twice a month for an occasion. But every day cooking? Ugh. I have one child who doesn't eat anything I eat, and I'm really not in the habit of preparing an elaborate meal for one. It kinda depresses me.
So lately I've been coming up with some quick and easy Trader Joe's throw-together meals I call "1-2-3s" that are healthy and nutritious. I even cook them for my friends and they LOVE them. I call them "1-2-3s" because most of them have just a few ingredients (well, packages) that can be easily thrown together in minutes. You'll notice most of them don't even have instructions, that's how easy they are.

This + Anything
Slice over a salad Eat with broccoli Give it to the kids with A1 Done
Poached Eggs + Health Bread
Perfect poached eggs: boil water with a splash of white vinegar. Crack eggs into boiling water. Simmer/boil on low for 4 minutes. Remove with slotted spoon. Serve over toast. Done.
Veggies + Broth + Sausages = Soup
Add it all to a pot, chopping sausages. Boil. Done.
Greek Yogurt + Blueberries + Honey
Add a handful of blueberries and a tablespoon of honey to the yogurt. Done.
Chicken Sausage + Fire Roasted Peppers
(use any flavor sausage you like) Chop/slice sausage and add to peppers. Done.
Superfood Pilaf + Chicken Sausage
(use any flavor sausage you like) Chop/slice sausage and add to quinoa mix. Add a dash of Bragg's or soy sauce. Done.
Chicken Yellow Curry
Chicken + Yellow Curry Sauce + Carrots + Onion + Potatoes Cut onion and potato into large wedges. Brown Chicken Add sauce, potato, onion, carrots, simmer till veggies are soft Serve with rice (optional)
